4 packets unflavored gelatin (1 oz total)
6 oz lime juice
1/2 cup water
1.5 cups simple syrup
2 cups Pickers Blueberry Vodka
1/2 cup fresh blueberries
Add the lime juice, water and simple syrup to a small saucepan. Sprinkle in the powdered gelatin and let it absorb moisture before placing the saucepan over medium-low heat. Let the mixture warm until the gelatin fully dissolves, stirring regularly. Remove from heat and add the Pickers Blueberry Vodka.
Pour 1/3 of the mixture into a 9" square flat-bottomed pan and refrigerate for one hour until cool. Remove from refrigerator and place blueberries on the surface, equally spaced. Carefully spoon more of the now room-temperature gelatin mixture over the blueberries and refrigerate until set. Pour remaining liquid over top and refrigerate overnight or until set.
When ready to serve, remove from pan and cut into bite-sized pieces with a sharp knife dipped into hot water.
